About the Author
Maria Elena Cuervo-Lorens is a Mexican-born housewife and mother of two. Raised in Mexico City where she married her husband of thirty two years, she has a college degree in English. Both of her children are now living away from home on Canada's West Coast. From 1979 to 1985 she was involved in the family book-publishing business, where she saw several cookbooks from other authors published. This is her first try with her own work.
Maria Elena moved to Canada in 1978. She visits Mexico regularly, at least once a year. Though fully at home now on Vancouver Island, she does have two complaints. One she addresses in this book: it is the scarcity of authentic ingredients for Mexican food. The other, is her favourite peeve:..."I have such a hard time getting people to call me by my full name, MARIA ELENA; everybody wants to shorten it to Maria. Heck! In Catholic countries most women are baptized Maria-something. It is a devotion from time immemorial. If we start calling every woman just Maria we will end with only our family names to set us apart."
She has a point there. One of the most popular "moles" in Mexico is the world famous...you guessed it , Mole Poblano "Dona Maria".
Maria Elena is presently teaching Mexican Cuisine at Camosun College in Victoria, British Columbia.
